  • 1/4 cup fresh lemon juice
  • 1/4 cup water
  • 3/4 cup firm tofu
  • 2 cloves crushed garlic
  • 2 tbsp capers
  • 1 tbsp caper brine
  • 2 tbsp nutritional yeast
  • 1 tbsp Dijon mustard
  • 1 tbsp white wine vinegar
  • Freshly ground pepper
  • Salt to taste


  • Put all ingredients in a blender and process until smooth. Add more water or lemon juice if too thick, or add more tofu if too runny. Can also be used as a creamy dip if made thicker.
  • Store in an airtight container in the fridge. Keeps for several days. Unused dressing can be frozen for future use.
