I EAT SIMPLY. Most of what I eat doesn’t even require a recipe. But everyone has different tastes and preferences, so I encourage you to create your own meal plans. And what I eat now is different than what I ate when I first went vegan, so as always, go slowly and be kind to yourself!

My Tricks

  1. Prep on weekends – potatoes, rice, parm, sauce, and dressings
  2. Batch cook – make enough for a second night or freezing
  3. Eat simply – whole foods taste great just the way they are (no recipe required!)
