Mexican Salad with Cumin Lime Dressing

This crowd-pleaser is hearty, filling, and super delicious!

Ingredients
  

  • Salad greens, various
  • 1 red or orange pepper, chopped
  • 1 avocado, chopped
  • 1 green onion, chopped
  • 1 cup cooked quinoa
  • 3/4 can of chickpeas

Dressing Ingredients

  • 1/4 can of chickpeas
  • 1 tbsp lime juice
  • 1 tsp dried cumin
  • 1 clove garlic
  • 2-3 jarred jalapeno slices
  • 1 tsp soy or tamari sauce
  • Salt to taste

Instructions
 

  • Place salad ingredients in a bowl.
  • Drain and rinse the chickpeas and add 3/4 of them to the salad. Set aside the remaining for the dressing.
  • Blend all dressing ingredients in a blender or food processor until smooth. Adjust seasoning to taste.
  • Pour over salad and combine.
  • Garnish with tortilla chips and enjoy!
