Coach Carol discusses vegan nutrition

If we want good health, we need good nutrition!

And every nutrient we need (apart from B12) is in plants. There is nothing in meat, dairy, or eggs that we can’t get in a healthier way from plants. Simply put, no animal has to die so that you can live.

If you eat a diet rich in vegetables, fruit, legumes (beans, lentils, and peas), and whole grains, you’ll be doing great! NO COUNTING REQUIRED. These foods are cholesterol-free, low in fat, high in fiber, loaded with vitamins and minerals, and packed with all the protein, calcium, and iron our bodies need.

IT REALLY IS THAT EASY. Whole plant foods have all you need. Eat them in abundance. You’ll naturally get what you need. But if you’d like to know more, read on!

Vegan Nutrition

The following reflects what I get asked about most often. It isn’t meant to be exhaustive, but what I’ve learned through research and course material. However, I’m not a doctor or a nutritionist, so please consult with your health care provider before making any major dietary changes.
