Lentil Barley Soup

This easy and delicious soup will keep you warm and full.

  • 1 onion, chopped
  • 2 celery ribs, diced
  • 2 large carrots, diced
  • 1 cup green lentils
  • 1/2 cup red lentils
  • 1/2 cup hulled barley
  • 1 can diced tomatoes
  • 8 cups water or veg stock
  • 2 garlic cloves, minced
  • 1 tsp oregano
  • 1 tsp ground cumin
  • 1/4 tsp turmeric
  • 1/4 tsp chili pepper flakes
  • Salt and pepper to taste
  • 3 cups fresh spinach leaves


  • Place all ingredients other than the spinach in a large pot (or sauté onion, celery and carrots first).
  • Bring to a boil and then simmer, stirring occasionally, until lentils and barley are tender - approximately 40 minutes.
  • Add the spinach leaves and simmer for 5 more minutes.
  • Serve with crusty bread.
