Easy Vegan Bean Chili

Hubby's Easy Bean Chili

Easy, Nutritious, Delicious!

Ingredients
  

  • 1 onion, finely chopped
  • 2 celery stalks, chopped
  • 2 large carrots, chopped
  • 1 can diced tomatoes
  • 1 jar pasta sauce
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can chickpeas, drained and rinsed
  • 1 package veggie ground round
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp turmeric
  • 1 cup baby spinach leaves, chopped

Instructions
 

  • In a large pot, heat oil and sauté onion, celery and carrots until soft.
  • Add all other ingredients except the spinach leaves. Bring to a boil, stir and reduce heat to simmer for 20 minutes.
  • Add the spinach leaves for the last few minutes.
  • Season with salt and pepper to taste.
  • Enjoy over brown rice or pasta noodles, and topped with your favourite vegan cheese shreds.
