Curried Sweet Potato Cauli Soup

  • 2 cups onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 2 tsp curry powder
  • 2 tsp cumin
  • 2 tsp mustard seeds
  • 1/2 tsp chilli pepper flakes
  • 3 cups sweet potato, diced
  • 4 cups cauliflower, chopped
  • 1 cup red lentils, dry
  • 6 cups water or veg broth
  • 4 cups spinach leaves, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste


  • Sauté onion until soft.
  • Add garlic, ginger, curry, cumin, mustard seeds and chilli flakes, and cook until seeds begin to pop (1-2 min).
  • Add sweet potato, cauliflower, lentils and water or broth. Bring to a boil, reduce heat and simmer 20-30 mins, until lentils and vegetables are soft.
  • Add spinach, lemon juice, salt and pepper and cook an additional 5 mins.
