Chana Masala, a vegan classic that is easy to make and delicious!

Servings 4 servings


  • 1 onion
  • 1 tbsp cumin
  • 1 tsp coriander 
  • 1 tsp garam masala 
  • 1 tsp curry powder
  • 1 tsp turmeric 
  • 1/2 tsp ground chili pepper
  • 3 cloves garlic 
  • 1 tsp fresh ginger, minced
  • 1 can chickpeas, drained and rinsed
  • 1 can crushed tomatoes
  • Half a block of extra-firm tofu, cubed
  • Chopped fresh tomatoes
  • Chopped fresh kale
  • Salt to taste 


  • Sauté onion for about five minutes until soft.
  • Add cumin, coriander, garam masala, curry powder, turmeric, chili pepper, garlic and ginger. Sauté for another minute or so to coat and infuse the onions.
  • Add chickpeas, crushed tomatoes, tofu and fresh tomatoes. Bring to a light boil and then simmer for 20 minutes.
  • Add kale and salt to taste and simmer for an additional 5 minutes.
  • Enjoy over brown or Basmati rice.
