Banana Chocolate Chip Explosion Muffins

Oil-free muffins never tasted so good!

Servings 12 muffins


  • 3 ripe bananas, mashed
  • 1/2 cup firm tofu, mashed
  • 1/2 cup sugar
  • 1/2 cup unsweetened applesauce*
  • 2 cups whole wheat flour
  • 1 tbsp vanilla
  • 1 tbsp baking powder
  • 1 cup vegan chocolate chips
  • cup walnuts, crushed


  • Mix the bananas, tofu, sugar, applesauce, flour, vanilla, and baking powder just until moistened.
  • Fold in the chocolate chips and walnuts.
  • Divide into a lightly greased or lined 12-cup muffin tin.
  • Bake at 375 degrees for 25-30 minutes.
