Potato and Pea Curry

Savoury, satisfying and super healthy!
Course Main Course


  • 1 medium onion
  • 4 cloves garlic, crushed
  • 2 medium potatoes, pre-cooked
  • 2 tomatoes, chopped
  • 1 cup tofu, cubed
  • 1 tbsp curry powder
  • 1 tbsp ground cumin
  • 1 tsp chili powder
  • 1 tsp ground turmeric
  • 1 cup unsweetened oat milk
  • 1 cup frozen peas


  • Sauté onion and garlic until soft.
  • Slice potatoes into bite-sized pieces. Add to the pan, along with tomatoes, tofu, spices and oat milk. Heat and boil gently for a few minutes.
  • Add peas and cook for a few more minutes.
  • Serve over brown rice.
